Using a Missouri Custom beef processor, we sell beef by the quarter, half or full.    The entire cow has to be allocated and sold as ‘shares’ to the customer(s) before it can be sent to the processor.

The amount of meat you will receive will vary largely based on the size of the cow although your cut preferences can also play a role.

The cost of the meat you purchase is based on ‘hanging weight’ plus taxes and delivery charge.

Hanging weight is the weight of the cow after the non-edible parts are removed such as the hide and head.    The cow will hang in a cooler for up to 18 days to let it ‘age’ which determines the tenderness of the cuts.    The final ‘packaged’ weight will be roughly 65% of the hanging weight after bones are removed.

For example, a 1100 pound steer may go to the butcher and have a hanging weight of 650 pounds.   If you were purchasing the full beef, your cost would be the hanging weight times our current cost per pound plus tax and a delivery charge.    Delivery charge waived if you pick up the meat, example below was for delivery to the Kansas City metro area.

The cost of a quarter would be 1/4th of that amount or $746.17.    Prices may change so check with us for current rates, the above example was effective pricing on August 2025.

Note: Above example was 3/4″ steak thickness.   If you request thicker steaks, you’ll get less packages although the total weight will be the same.
